So this weekend I am attending a big event. I needed to make a light lunch for the all day out door event. So here’s what I came up with. I love it when my kitchen experiments go right on the 1st try. So let’s get started.
Whole Oven Roasted cooked chicken or rotisserie chicken (cut into bite size pieces with the skin removed.)
1 Bag of Broccoli Slaw (or whatever you like)
4 Green Onions Finely Chopped
1/2 Cup diced red, yellow and green peppers
1 TBS of Fresh Cracked Black Pepper
1/2 tsp of sea salt
1/2 tsp Paprika
1/2 tsp of Onion Powder
1/2 tsp of Garlic Powder
1 TBS of Mustard
3 TBS of Dried Dill
6-8 TBS of Vegenaise or mayo
Add all ingredients except Vegenaise. Mix thoroughly to get everything evenly combine. Once combined add Vegenaise and mix to get everything evenly coated. Now enjoy it over a bed of lettuce or spinach or however you desire.
I had to share my latest find. Earlier this week I was in MOM’S aka My Organic Market……when I stumbled upon
When my daughter’s like something it’s a miracle. So now we don’t have to run to Panera Bread for their Favorite Sandwich…..The Sierra Turkey. We can make it at home. So in my book this has officially been a MOMMY winning week. I have discovered something my picky eaters like and it’s healthy, which equals a happy MOM!!!
