Thai Basil Inspired Ground Turkey

Hello everyone,

I have been wanting to try something different with Ground Turkey and this recipe is something new and delicious. You will just have to see for yourself. Let’s get started……

Ingredients:

1 pound of Ground Turkey
2 TBS Hoisin Sauce
2 TBS Amino Acid (or low sodium soy sauce)
3 cloves of garlic finely chopped
2 tsp dried basil
2 tsp onion powder
1 tsp black pepper
1/4 Cup green, yellow and red peppers
2 tsp toasted sesame oil
2 tsp grape seed oil

Directions:

In a bowl add Hoisin sauce, amino acid and sesame oil, stir and set aside.

In a small bowl add basil, onion powder and black pepper.

In a pan on medium heat add grape seed oil, garlic and pepper’s. Stir for 2 minutes.

Add ground turkey, cook until completely cooked. Turn heat off add dry seasonings, stir to combine. Add your sauce and stir to evenly coat the ground turkey.

Sprinkle with cayenne pepper, serve over coconut rice or have as a lettuce wrap. Get creative and have fun in the kitchen.

Easy No Fuss Coconut Rice

Many years ago a friend had me over for dinner. She had a great dinner that included coconut rice. That inspired me to give it a try. The first time I made it, it turned out well……but after that first time….I just couldn’t get the consistency right. So a few days ago I decided to give it another try to compliment a dish I wanted to experiment with. Well it turned out great and I have been able to duplicate the process. The process is super simple that my youngest who is learning to cook, made it all by herself. So now it’s time to share.

Ingredients:

1 1/4 C of Brown Jasmine Rice (or rice of choice)
3/4 C water
1 1/2 C coconut milk
1/2 tsp salt
1 Tbs Cane Sugar

Directions:

In a medium pot add rice, water, coconut milk, salt and sugar. Stir to mix together.

Set the stove on high and bring to a boil. Takes about 5 minutes (make sure your top is on the pot).

Once it begins to boil immediately reduce to a simmer for 25 minutes. Once it’s done serve with whatever you like.

DIY Peanut Butter Sauce

Hello everyone,

I just wanted to share a quick and easy sauce.  It’s great on salad to pasta and more.  So let’s jump right into the recipe.

Ingredients :

1/2 Cup of Peanut Butter (smooth or crunchy)
1/2 Cup of Water
1 TBS of Rice Vinegar
1 TBS of Toasted Sesame Oil
1 TBS of Honey
1 TBS of Amino Acid or Soy Sauce
1 Clove of Crushed Garlic

Instructions :

In a saucepan on low heat add all your ingredients. Stir until smooth and full combined.  Takes about 3-5 minutes.

Thai Style Noodles with Chicken & Veggies

Hello lovely readers,

Here is my latest kitchen experiment gone right…lol.  This was really a big hit.  What I really love about this dish is you can add different things to it every time and make it somewhat new.  So let’s get started.

Ingredients:

8 oz.  Brown Rice Noodles

4 Chicken Tenderloins (cut into bite size pieces)

2 Organic garlic cloves (minced)

4 Organic green onions (finely chopped)

1 Organic thumb size piece of ginger (finely chopped)

2 Handfuls of organic shredded carrots

1 Organic head of cauliflower (cut into florets)

1 Bag of organic frozen peas

1/2 cup of organic reduced sodium chicken broth

2  1/2 Tbs of grape seed oil (or oil of choice

1 tsp of toasted sesame oil

Marinade:

2 tsp. cornstarch dissolved in 3 Tbsp of Braggs Amino Acid or Reduced Sodium Soy Sauce

To make the stir fry sauce:

1 ½ Tbsp. Amino Acid
1 Tbsp. lime juice
1/4 cup chicken stock

Directions:

1. Mix amino acid and cornstarch. Stir in chicken pieces and set aside.
2. Soak rice noodles in a pot of hot water per directions on the package. Drain. They will finish cooking in the stir fry.
3. Combine all stir-fry sauce ingredients in a small bowl. Set aside.
4. Heat a wok or large frying pan until hot. Add the oil then the garlic, ginger, carrots, peas, cauliflower and chicken with the marinade. Stir-fry 5-7 minutes, or until chicken and vegetables are cooked. If it dries out, add about 2 TBS. chicken stock,
5.  Add the noodles, then stir in the stir-fry sauce. continuing to stir-fry another minute. Drizzle sesame oil  add some lime juice after tasting. This recipe serves 3-4 people.

I add  red pepper flakes and cayenne pepper to my portion. I love the heat!!!
