Easy Homemade Lemon Cookies

Hello everyone,

I have been craving something sweet…..so I decided to try out lemon cookies for the 1st time. When they were all done…..I called my super tasters to try them out. They gave the recipe a thumbs up…..so that means it’s time to share.

Ingredients :

6 tsp butter, softened
1/2 cup sugar
1/4 cup Squash Puree
1 teaspoon lemon zest*
3 tablespoon fresh lemon juice*
1/4 teaspoon sea salt
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1 1/2 cup All Purpose Flour

Directions:

Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside. In a food  processor or large mixing bowl, cream the butter and sugar together until light and fluffy. Add squash, lemon juice and lemon zest. Beat until well combined. Set aside.

In a separate bowl, whisk together the flour, salt, baking powder and baking soda. Add the dry ingredients to the wet ingredients and stir just until they are combined. Place the powdered sugar in a small bowl and set aside.

Scoop about a tablespoon of the cookie dough  and roll into a ball. Repeat with the rest of the dough, press dough with your fingers to flatten a little. Bake for about 10 minutes, or just until the bottoms of the cookies begin to brown and the cookies are no longer shiny. Remove from the oven and let rest for a minute or two. Next transfer cookies to a wire rack to completely cook. Store cookies in an airtight container.

Neapolitan Cookies & Ice Cream Super Quick & Easy Sweet Treat

This is a great dessert option when you just don’t have time to bake or simply are just not in the baking mood.  This sweet treat is perfect for the kids to make themselves.  All you need are store bought cookies of your choice.  Soft or cookies with a crunch will work perfectly.  For this treat I went with Whole Foods Fresh Baked Cookies.  They now sell a variety pack of 20 which contains 5 of each of the following sugar, oatmeal, chocolate with chocolate chips and chocolate chip for $9.99.  That is a great deal for Whole Foods.

To assemble I cut a sugar cookie and chocolate with chocolate chips in half and put a tablespoon of strawberry ice cream in between( you could of course opt for Frozen Yogurt as well) and came up with this delicious treat………………

For a busy mom this is perfect.  It’s quick and the kids love it.  That is what I call a win-win.

Oven Fried Chicken with a Brown Sugar & Peanut Butter Glaze

Hello World……..

I have not blogged in days…….and I have missed it.  I have been busy moving and because of the move the family and I have been eating out.  Today I had enough.  I desperately needed a home cooked meal.  So I got the kitchen in order and started prepping dinner.  Tonight I was in an experimental mood and wanted to try something different.

So I made my household famous “Oven Fried Wings” and added a Brown Sugar and Peanut Butter Glaze/Sauce.  It gives the chicken a bit of an Asian Flare.  It was absolutely delicious.  This is one experiment that paid off!!

Now onto the Brown Sugar & Peanut Butter Glaze/Sauce

1/2 C of light brown sugar

1/2 C of water

1/4 tsp of garlic powder

1/4 tsp of black pepper

1/4 tsp of  Mrs. Dash

1 TBS of Peanut Butter

In a pot add water and brown sugar on medium high heat, until the sugar is dissolved.  Your basically making a simple syrup.  Remove from the heat.  Add all of your remaining ingredients and whisk well.  Once everything is incorporated pour over your chicken and serve.
