Chicken & Spinach Burger

This recipe is inspired by some frozen patties I saw in the grocery store.  Since the grocery store version had so many preservatives and additives I decided……why not make my own. That way I can put the things I like, want and need into it without any unnecessary additives.

So let’s dive in….

Ingredients:

5-6 Organic boneless skinless chicken thighs (you can certainly use breast or mix breast and thighs…..I prefer thigh because of it’s, moistness and ability to take on deeper flavors quickly).
2 Cups of fresh organic spinach
1/2 Cup organic diced onion
1/2 Cup organic diced pepper (red, yellow & green)…..or whatever you have on hand

Dried Seasonings/Herbs:
1 tsp garlic powder
1 tsp onion powder
1 tsp no-salt seasoning blend (21 Salutes, Mrs. Dash or my preference Costco’s organic no- salt seasoning)
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp cardamom
1/4 tsp coriander
1/8 tsp thyme
1/8 tsp sage
1 Tbsp amino acid (or low sodium soy sauce)

*In my cooking I like to use lot’s of different herbs/spices…..I love flavorful food and the enjoyment of friends saying what’s in this and trying to guess…..they usually can guess/taste & distinguish a few…lol.  If you don’t have the herbs/spices on hand then just go with what you have.  If I am cooking something and I can make do without it….I go without those ingredients and cook on anyway…..there’s alway’s next time.

Method:

1.  Place all ingredients in a ( large 6-8 Cup) food processor and pulse for 1-2 minutes.

* I now prefer making my own ground meat. If I forget to take out something for dinner it takes a lot less time to defrost boneless skinless chicken in cool water and vinegar. Over pre-packaged ground meat. This also allows me to clean the meat properly.

2.  Now using and ice cream scoop you can make even size patties. You can opt to cook them as you desire (I put mine on the grill this time) or freeze the patties (up to 2 months) for future cooking.

Easy Semi Homemade Spinach & Cheese Ravioli

Recently, I was at Whole Foods Market picking up a few thing’s. On my list was frozen ravioli. Initially I was just going to get cheese ravioli to make oven fried ravioli, click here for that recipe. But just as I was getting ready to close the freezer door I saw Organic Spinach and Cheese Whole Wheat Ravioli. I knew that I could use this to make a quick semi-homemade dish. So let’s get started. …

Ingredients:

1 Bag of Spinach and Cheese Ravioli (or whatever type you desire)
Pan Seared, Boiled or Grilled Chicken
Marinara Sauce
Parmesan Cheese
Dried Oregano
Dried Basil

Directions:

Cook Ravioli according to package directions.
Cook chicken tenderloins as desired and cut into cubes
Warm your Marinara Sauce

Now it’s time to plate……..
Add ravioli, place chicken on top, spoon on marinara sauce, sprinkle on parmesan cheese, oregano and basil.

This is a quick and very easy semi-homemade meal.

Turkey & Spinach Meatballs

A few weekend’s ago I was in the grocery store, grabbing a pack of ground turkey. When a lovely lady asked me if I cook with ground turkey often. I excitedly replied with a yes. She asked for a few tips because her ground turkey dishes are always dry.
So now I am going to share the recipe I shared with her, with all.
I love this recipe for a few reasons…..it’s lean, juicy and I can sneak all kinds of veggies and healthy ingredients in without any detection. So let’s get started.

Ingredients:

3 lb pack of ground turkey
2 Tbs of flax seeds
2 handfuls of fresh spinach
1/2 cup of cauliflower puree
3 spring onions
1/4 of a yellow onion
1/4 tsp black pepper, oregano, garlic powder, dried parsley, onion powder, Mrs.Dash
Pich of sage
3 Tbs of Braggs Amino Acid or Low Sodium Soy Sauce
Grapeseed oil

Directions:

Pre-Heat oven to 425°

Line a baking tray with parchment paper

Finely chop the spinach, onions

In a large bowl add your ground turkey, spinach, onions, cauliflower puree, amino acid, herbs & spices

Get everything evenly combined

With an ice cream scoop. Scoop out the ground turkey onto your baking tray. Drizzle Grapeseed oil across the top and bake for 45 minutes
Serve with whatever you like.
