Peanut Butter & Jelly Cookies

Hello everyone,

My oldest Loves a P B & J sandwich. So I thought why not take what she loves in a sandwich and make the cookie version. Let’s get started.

Ingredients:

1 1/2 cups All Purpose flour
1/2 teaspoon baking powder
pinch of salt
3 Tbs organic vegetable shortening (or melted butter)
1 cup organic peanut butter
2 tsp organic teaspoons vanilla extract
1/4 cup organic brown sugar
1/2 cup organic cane sugar
1/2 cup unsweetened organic applesauce

Directions:

Preheat over to 350°

Mix together the vegetable shortening, peanut butter, vanilla extract, sugars and applesauce in a large bowl.

Combine flour, salt, and baking powder.

Gradually mix in the flour into your wet ingredients until the flour is fully incorporated.

Roll into 1 1/2 inch balls.

Using a fork, flatten the cookie and make a criss-cross pattern.

Bake for 12-13 minutes. Let cookies cool for 5 minutes.  Then let it finish cooling on a baking rack.

Once cooled add 1 tsp of jelly (to make your own jelly check out this recipe here) onto a cookie and top with another cookie. You can get creative with your fillings, use chocolate or whatever you like.

Yields about 24-26 individual cookies or 12-13 sandwich cookies.
