Creamy Chicken & Broccoli Pasta with Crispy Turkey Bacon

Ok here’s how it all went down. I saw this yummy looking recipe on Pinterest. I immediately thought this would be great for dinner. Now here’s my delimma…..how do I sell this deliciousness to the kid’s. They are super picky.

So here’s how I sold them the dish. I showed them the pic…..and as I expected they immediately want to know, what’s in it.

I start by saying that I will tweak the original dish a bit and it will only have thing’s you love.

Chicken

 Crispy Turkey Bacon

Broccoli

Pasta

Mozzarella Cheese

My sales pitch wins them over and I get cooking and thankfully they really love the dish. Winning over my kid’s is no easy task, so when I do I have to celebrate. Now that I am done celebrating I want to share this deliciousness with you.

Ingredients:

1 lb of organic boneless skinless chicken ( I used chicken thigh)

8 Strips of Organic Turkey Bacon

(1) 13.25 oz of Whole Grain Penne Pasta

1 C Organic Heavy Cream

1/2 C Organic Milk

2 1/4 C of Organic or rBST free Mozzarella Cheese

3 C of  organic fresh or unthawed frozen broccoli

2 Tbsp of oil of choice ( I used grapeseed)

Seasonings

garlic powder, onion powder, Mrs. Dash, black pepper & pink Himalayan sea salt

Method:

  1.  Start by cooking your pasta according to package directions.  Drain and set aside (making sure to reserve 1/4 C of your pasta water.)
  2. Cook your turkey bacon until nice and crisp as you desire. Then cut into bite size pieces.
  3. Next liberally season your chicken on both sides with the seasonings mentioned above.  Add oil to a large pan and cook chicken on both sides until cooked through on medium-high heat. Once done remove and set aside.
  4. Lower your pan to medium heat.  Add reserved pasta water, then heavy cream and a 1/2 tsp of the above seasoning. Stir to completely incorporate the seasonings. Once the mixture comes to a boil add your cheese and stir to make sure the cheese evenly melts.
  5. Add your pasta and mix to incorporate, next a the broccoli mix to incorporate, then add chicken and turkey bacon. Remove from the heat and now you are ready to enjoy.

This dish was a huge hit. I usually try and make healthier swaps with my dishes but this one I just went for it.

Garlic Butter and Basil Pasta

Hello all,

A few weeks back I saw a blog post by Andrea of Cooking with a Wallflower. For Basil Garlic Noodles. I had to give the recipe a try but with my own twist to it. Thank you to Andrea for the inspiration.

Now let’s get started………

Ingredients:

2 TBS of unsalted butter (my preference Kerry gold click here to read why)
10 cloves of garlic
1 1/2 TBS of dried basil
1/2 Cup of peppers (red, yellow or green or a blend of all 3)
1 Cup of fresh spinach
1 tsp of crushed red pepper flakes
1/2 tsp of sea salt and black pepper
1 package of pappardelle pasta ( or pasta of choice)
1/3 Cup of reserved pasta water

This is a great quick and easy recipe. I will even put up a video to make peeling garlic easy. You will have your garlic peeled in 20 second flat. I promise it is quick and easy.

Now that you have all your garlic peeled and other items prepped. Let’s get cooking.

Instructions:

1. Cook pasta according to packaging and remember to reserve 1/3 cup of pasta water.

2. In a large skillet on low to medium heat add the butter and garlic and stir for 2-3 minutes.

3. Add your peppers and stir for another 2-3 minutes.

4. Add your spinach, seasoning and reserved pasta water. Stir for 3 minutes.

5. Add the pasta and stir to evenly coat and combine. Takes about 2 minutes.

You can add so many things to this dish to change it up. Customize it to suit your taste buds.

Homemade Ground Turkey Helper

Hello all,

I had a request to make a homemade version of hamburger helper. This recipe was kid tested an approved. So now it’s time to share it with you.

Ingredients:

2 pounds of ground turkey (or Chicken or Beef)
1 box of whole grain elbow pasta
1 (16 oz.)Bag of frozen corn
2 cloves of garlic finely chopped
1/4 Cup chopped basil
1/4 Cup chopped cilantro
1/2 tsp of garlic powder, onion powder, smoked paprika, black pepper, sea salt, cumin
1 Tbs flaxseeds (optional)
1 Cup of Shredded Cheese
1/4 Cup Cauliflower Puree
1/4 Cup diced onions
1/4 Cup of red, yellow and green peppers
1/4 Cup Organic Ketchup
4 Tbs of tomato paste

Directions:

In a small bowl combine flaxseeds, garlic powder, onion powder, cumin, smoked paprika, black pepper and salt.

Boil 4 cups of water in a pot. once the water is at a boil add the elbow pasta until al dente and drain water. Set aside for now.

On medium heat, in a large sauce pan add the ground turkey. As the meat is browning, break up the meat as it cooks. Once all the pink is gone add your seasonings, corn, garlic, onions, green peppers, basil, cilantro and cauliflower puree. Stir to evenly combine. Now add tomato paste and ketchup. Stir to incorporate. Now add the cheese and stir to incorporate.

Once the cheese is melted and incorporated well. Add your elbow pasta to a large bowl. Add the meat mixture in the bowl and combine everything evenly.

Crock Pot Turkey Spaghetti with Whole Grain Pasta

I love making this Spaghetti…..it’s so flavorful. I recently made this when my brother, sister in law and nieces came for a visit. My brother insist ground turkey doesn’t taste good when making and whole grain pasta forget it. So I thought if I don’t tell him that it’s Turkey and Whole Grain Pasta he may change his mind.  This Spaghetti did just that. Since it’s a winning dish I thought I have to share it.

Ingredients:

1 Box of Whole Grain Spaghetti Noodles

3 Jars of 24 oz Spaghetti Sauce ( I love Newmans)

3 lbs of Ground Turkey ( I prefer Organic)

1/2 of a medium onion

1/2 cup of green, yellow & red peppers

Thyme

Sea Salt

Oregano

Mrs. Dash

Fennel

Black Pepper

Paprika

Garlic Powder

Onion Powder

Herb de Provence

I start by prepping
Chop half of a medium onion and 1/2 cup of red, yellow and green peppers
( I purchase the frozen trio from Trader Joes’s….very convenient)

Set the onions and peppers aside

It’s time to make the herb and spice blend.

In a small bowl mix all of the following
1/4 tsp Thyme

1/4 tsp Sea Salt

1 tsp Oregano

1/2 tsp Mrs. Dash

1/2 tsp Fennel

1/4 tsp Black Pepper

1/2 tsp Garlic Powder

1/2 tsp Onion Powder

1/2 tsp of Paprika

1/2 tsp Herb de Provence

Set aside

Next preheat your pan 2 TBS of oil in a non stick pan and cook the ground turkey until browned.

Once the Turkey is browned turn off
the stove top an add all spice blend from the bowl

Get the spice blend evenly distributed

It’s time to use the crock pot

add all of your sauce, onions and peppers and the turkey and let it cook on high for 3 hour or low for 6

Cook your noodles according the the package

When everything is all done

You will have a delicious meal

A tip I picked up the other day from Bethenny Frankel’s tv show…….to reduce the fat of your favorite dressing add vinegar.  I love Ranch……. added a little vinegar……just enough to thin it out.  It taste terrific this is something simple to do to have what I enjoy in a healthier manner.
