Turn Something Your Kids Won’t Eat into Something They Will

So a few weeks ago the family an I are in the grocery store. We head down the cereal isle my youngest gets what she likes…….but my oldest can’t decide, so she finally makes her decision and into the cart it goes. We finish getting everything off the list, check out and head home to put everything away.

The next morning my girls want cereal for breakfast one was a hit and one was a miss. I hate letting things go to waste…..so I decided to do a little something I haven’t done in a long time.

Ingredients:
6 chicken tenders
5 Cup Frosted Flakes
1/4 tsp black pepper, paprika, onion powder, garlic powder and salt
Grapeseed Oil or oil of choice

Directions:
Pre-heat oven to 400°
Line a baking tray with parchment paper and place your baking rack on top
Fine or loosely crush your cereal.
Combine seasoning in a bowl
Add seasoning to your tenders….making sure to evenly coat.
Drizzle a little oil on all sides and then evenly coat chicken on all side with the cereal.
Drizzle a little oil across the top now bake for 30 minutes. ( If you are not using a baking rack flip the tenders over after 15 minutes of cooking.
Once done….let cool and serve with whatever you like.

Tortilla Turkey & Spinach Pizza

This recipe is for those day’s you just don’t feel like cooking but still want your kids to have a healthy meal.  This was great because the entire family could personalize their pizza.  So let’s just dive right into this super simple and quick no fuss meal.

Ingredients

flour tortilla

olive oil

Muenster Cheese Slices

Tomato Sauce of choice

Dried Oregano

Coarse Ground Black Perpper

Red Pepper Flakes

Sauteed Spinach

Deli Turkey Slices

 

Directions  

 

Preheat oven to 450.  Place a flour tortilla on a pizza baking sheet and brush topside lightly with olive oil.  Spread 1 Tbs of tomato sauce  Break your Muenster Cheese into pieces and add.  Next cut up a turkey slice, season with black pepper and red pepper flakes. Finally add sauteed spinach ( which you stir-fry in a pan on the stove top in garlic and onion powder and a bit of olive oil)  Bake until golden brown and crispy, 8-10 minutes. Serves one.

Juicy Turkey Meatloaf Full of Flavor and Health Benefits

Hello all,

So I have finally gotten around to sharing my meatloaf recipe.  This recipe is a hit with my family.  When your children ask you to make meatloaf…….you know you have done something RIGHT.  When I was a kid you would “NEVER EVER” hear me ask my mother to make meatloaf…..I dreaded it when she did…lol……..now let that be our little secret. 😉

 

So let’s jump in with all that is needed:

3 lb pack of turkey

4 Tbs of cauliflower puree

1 Egg

1 Tbs of ground flaxseed

2 tsp of garlic powder, onion powder, parsley & Mrs. Dash

1 tsp of black pepper, smoked paprika & basil

Directions:

Preheat oven to 375

Line your cooking sheet with parchment

In a small bowl add your flaxseed, garlic powder, onion powder, parsley, Mrs. Dash, black pepper, smoked paprika and basil. Get everything evenly combined.

Place your ground turkey in a large bowl.

Shake on your seasoning blend, add the egg and your cauliflower puree (the cauliflower add’s moisture and added fiber)  (the flaxseed is used instead of bread crumb which also adds omega 3’s and fiber)

Incorporate all the ingredients into the ground turkey. ( Don’t over mix)

Transfer onto your parchment lined baking sheet

Mold into a loaf shape

Bake for 45 minutes – 1 hour
