Gluten Free Parmesan Chicken Nuggets

Hello all,

Have you ever had a meal planned and your missing an ingredient?  Now I could just make a quick trip to the store but……I am already home and don’t want to go back to the store. Plus, I don’t have time to go back now. I have to get dinner on the table soon. So I decide to work with what I had on hand. Which turned out to be such a great accidental and delicious dish.  So let’s get cooking.


12 chicken tenders
1 tsp oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp dried parsley
1/2 tsp salt
1/2 tsp black pepper
1/4 Cup of grated Parmesan Cheese
2 Tbs of Grapeseed Oil

Pre-heat oven to 425°

Line a baking sheet with parchment paper.

Mix cheese and seasoning together in a small bowl set aside.

Cut your chicken tenders into small nugget size pieces

Place your chicken into a large bowl.

Add your oil. Evenly coat each piece with the oil.

Add your seasoning mixture and get it evenly coated on each piece of chicken.

Place chicken on baking sheet. 

Place into the and cook for 8 minutes.  Flip the pieces over and bake for 8 minutes longer.

Next turn your oven to broil and broil for 3 minutes.

Let cool and enjoy with whatever you desire.

Pan Seared Salmon Croquettes

Today was one of those day’s where I didn’t know what we having dinner. I went from the fridge to the freezer, to the pantry. Just didn’t feel inspired. So out of the kitchen I went, thinking I’ll just order out then it hit me. Pan Seared Salmon Patties. So back to the kitchen I went and here’s what I came up with.


Frozen or Fresh Salmon
1/4 C chopped onion
1/4 C green peppers
1/4 C freshly chopped basil
2 cloves of garlic crushed
1 tsp of paprika, garlic powder, onion powder, Mrs.Dash
1/2 tsp of black pepper
1/4 tsp salt
2 Tbs of mayonnaise
1 Tbs of dijon mustard
4 Tbs of all purpose flour
2 eggs
Grapeseed Oil or oil of choice


Pre-Heat oven to 400°

Line a baking sheet with parchment.

In a small bowl combine all seasoning.

Lay your salmon pieces on your baking sheet.

Spoon seasoning over the fish evenly, flip over and season the other side ( you should have some seasoning left over which you will use later) drizzle a little oil over the top.

Place in the oven bake for 20-25 minutes. Flipping the fish after 10-12 minutes.

Once done place the fish in a large bowl and shred with forks.

Add the remainder of the seasoning.

Add your mayonnaise, mustard, onion garlic, basil, eggs. Mix to evenly incorporate ingredients.

Add your flour mix to evenly coat salmon.

Pre-heat a pan on the stove on medium heat with 1 Tbs of your oil.

Use an ice cream scoop so that all the patties are the same size.

Scoop mixture drop into your pan and slightly flatten with a fork to get the patty shape.

Cook for 2 minutes on each side. The patties will have a beautiful golden brown color.

Serve with your sides of choice. For us it was left over seasoned green beans from the night before and oven fried potato wedges.
