Quick & Easy Homemade Pancake Mix

Hello everyone,

Who needs store bought, when you can do it better in the same amount of time?   Here’s a quick and easy pancake recipe.  Let’s get started……..

Ingredients:

Dry mix:
Mix all ingredients to evenly incorporate. Store in an air tight container and use when ready to make pancakes.

4 Cup flour
2 TBS baking powder
3 tsp baking soda
1/2 tsp salt

Making pancakes:

1 Cup pancake mix
1 TBS vinegar
1 cup almond milk ( or milk of choice)
1 egg
1 TBS butter, melted or oil
1 tsp vanilla extract
1-2 tsp cinnamon

Directions:

1. Combine milk with vinegar in a measuring cup. Set aside for about 5 minutes.

2. Add 1 Cup of your pancake mix,
butter, egg, milk mixture, cinnamon, vanilla into the bowl. Mix until nice and smooth.

3.Spray skillet with non stick cooking spray or use oil or butter. Heat skillet on med-high heat. Pour pancake batter into skillet in 1/4 cup increments or use a ice cream scoop.

4. Cook pancakes until bubbles begin to appear on the surface. Flip with a spatula and cook for another 1-2 minutes until golden on the bottom.

This mix is very versatile. You can add fruit, chocolate chips or whatever you desire as you drop the 1/4 cupfuls into the skillet. Get as creative as you would like. Enjoy!

Homemade Chicago Style Deep Dish Pizza

This recipe has me sooooooooooo excited.  First, because I’ve really been wanting to try to make a deep dish pizza.  Secondly, because it turned out sooooooooooo well. It’s nice to surprise yourself with your own cooking.  I must admit that I was a bit nervous as to how  the family would like it. All I have to say is by the time I went to get more…..it was all gone. Which was great because it was a hit and sad because I really wanted another piece.😯  Oh well at least I have a recipe now…..that is easy to replicate and allows for tons of creativity, tailored to your needs.

So let’s get started.

Ingredients for making the dough

2 C. Organic All Purpose Flour
1 C.Organic Whole Grain or Wheat Flour ( you can also just use 3 Cups of All Purpose)
1 C. warm water
2  1/4 tsp. active dry yeast
1 tsp. sugar
1/2 tsp. sea salt
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
2 TBS. Olive oil

Instructions:

In a measuring cup add your water, yeast, and sugar. Mix well and set aside for 5 minutes.

In a food processor or large bowl add the water mixture and 1 Cup of Flour and mix, add another cup of Flour and mix, add the last cup of Flour, oil, salt and seasoning and mix until you have a ball of dough.

Knead your dough…..no need to add flour to the counter. Drizzle a large bowl with olive oil place your dough inside and drizzle a little olive oil on top.
Cover with plastic wrap and let it rise in a warm spot for a minimum of 30 minutes or up to overnight in the refrigerator.

Grease a 9×2 inch baking pan with olive oil.

Start prepping your toppings of choice. I decided on Mozzarella cheese, Turkey Bacon, Spinach, Turkey, Marinara, dried Basil, Cracked Black Pepper, and Onion.

Pre-heat oven to 450°

Once your dough has risen. Lay your dough on your counter. Cut off 1/3 of the dough and set aside. (This will be your top layer)

With a rolling pin roll out your dough, larger than your baking pan.

Lay your dough into your pan, making sure to get out any air bubbles.

Add your topping in the order you choose. (I added cheese, basil, black pepper, spinach, Turkey bacon, onion, and turkey)

Roll out the dough you set aside lay it into your pan again making sure to get out the air bubbles. Tear a few hole into the dough to allow the steam to escape while cooking. Spoon on 4 tablespoons of marinara sauce.

Roll the dough so that it overhang onto the pan.

Place on the bottom rack and bake on 450° for 20 minutes. If you like you can top with Parmesan cheese or cheese of choice after 15 minutes.

Once done…..let it cool for 10-15 minutes.

Now it’s time to enjoy.

Easy Homemade Strawberry & Chocolate Cereal Bars

My daughter has been begging me to try and make…….her favorite snack….. Strawberry Cereal Bars. She loves the Trader Joe’s Brand. So of course I had to honor her sweet request. Since my youngest doesn’t like strawberries, I decided to add her favorite filing chocolate. Now let’s dive in and start baking.

Crust:

1/2 cup organic unrefined coconut oil
1/3 cup organic cane sugar
1/2 teaspoon organic vanilla extract
1large organic egg
2 cups organic whole wheat flour
1 cup organic oats (steel cut, old fashion or instant)
1/2 teaspoon Pink Himalayan sea salt
1 teaspoon organic baking powder
Organic Almond Milk ( or milk of choice)

Filing:

Any preserve, jelly, jam (I used a homemade strawberry jam click here for that recipe.) or melt a 1/2 cup of chocolate chips I opted for semi-sweet.

Directions:

Pre-heat oven to 350°

Cream the coconut oil, sugar, vanilla, and egg, with an electric mixer or food processor.

In a separate bowl, combine flour, oats, salt, and baking powder.   Add dry ingredients to your creamed ingredients, a little at a time, until it is well incorporated. (Add a tablespoon of Almond Milk at a time if needed to help the dough form.)

Wrap dough in plastic wrap or place in a bowl and chill for 1 hour in the refrigerator or 15 minutes in the freezer. Once chilled, roll out onto wax paper. Roll and cut out a 4×4-inch square that is 1/4 inch thick.

Spoon 1 teaspoon of the filling onto one side, and fold over and pinch to keep the filling in.  Transfer to a cookie sheet and bake at 350 for 15 minutes.  To keep these soft, store in a zip lock plastic bag or air proof container.

Peanut Butter Bread

Hello all,

I have been wanting to make this for week’s. It’s such a great feeling to make something new and it turns out right the first time. The little thing’s excite me!!!! So onto the recipe……

Ingredients:

2 Cups of all purpose flour
1 Tablespoon of baking powder
1/2 tsp of sea salt
1 Cup of Almond Milk Unsweetened Plain or Vanilla ( or milk of choice)
1/4 Cup of Sugar
1 Cup of Peanut Butter
3/4 Cup of Squash Puree (or 2 eggs)

Directions:

Pre-heat oven to 350°

Line a loaf pan with parchment paper

In a large bowl sift in your flour.

Next add baking powder, sugar, milk, peanut butter and squash puree.

Mix until smooth by hand or with a hand mixer.

Pour batter into parchment paper lined loaf pan and bake for 45-50 minutes. ( Feel free to add 1/2 Cup of chocolate chips and or 1/4 of nuts right on top of the batter and then place into the oven.

Once done let it completely cool.

Cut and enjoy. Drizzle on some chocolate ganache or spread on some jam. I love this recipe because you can customize it in so many ways.

Homemade Spicy Coconut Granola

Hello all,

A few weeks ago I made Peach Cobbler with Crumble Topping. Since then I have had granola on the brain. So I decided to make some. So let’s jump right into the recipe.

Ingredients:

3 cups of old fashioned oats
1 cup of unsweetened shredded coconut
1/3 cup of raisins, flax seeds peanuts, sunflower seeds and any other nut of choice
1/3 cup of brown sugar
2 Tbs of Grapeseed Oil (or oil of choice like coconut oil, olive oil etc.
1 tsp or less of cayenne pepper ( I Love Spicy Food)
1 tsp of Vanilla Extract

Directions:

Combine all ingredients together in a bowl.

On sheet tray lined with parchment paper, spread the mixture.

Bake on 325° for 15 minutes. Let cool and place in an airtight container.

Get as creative as you like. Use what you have on hand. To make this into bars versus loose add 1/3 cup of honey or maple syrup. Make this with your kids but whatever you do have fun with it.

Herb Encrusted Oven Fried Potato Wedges

Hello all,

I hope everyone is ready to watch the Super Bowl on Sunday.  My contribution to the party will be my herb encrusted oven fried potato wedges.

Let’s dive into making this simple and versatile dish.

Russet Potatoes ( the amount depends on how many your feeding)

1 tsp smoked paprika, paprika, onion powder, garlic powder, parsley, black pepper (place all these into a bowl and mix to completely combine)

1/2 tsp sea salt

1- 2 Tbs Grapeseed oil

Directions:

Pre-heat oven to 475°

Wash and thoroughly dry your potatoes.

Line a baking sheet with parchment paper

Cut your potatoes in half, then cut in half again and cut in half once more.

Lay your wedges on the baking sheet and drizzle the oil across.  Now take your hands and fully coat each wedge in the oil on all sides.

Sprinkle your bowl of combined herbs onto the wedges. Be sure to massage the herbs in and coat all sides.

Place in the oven for 45 minutes – 1 hour.

Sprinkle salt on immediately after removing from the oven.

You can get really creative by adding cheese, bacon, cayenne pepper and so much more.
