Homemade Cookie Butter

Hello everyone,

Can I just say…..that I have been wanting to taste Cookie Butter, since I first saw it on the shelves of Trader Joe’s. The only problem was it had to many additives. It looks like I am going to have to make my own. In a previous post I wrote about a particular brand of Ginger Snap Cookies.  I wanted to try out something new in the kitchen. Cookie Butter…..but those cookies didn’t meet my expectations of a Ginger Snap Cookie.  Now that I have cookies that meet my requirement, it was time to get started. But, how can you replicate something you’ve never tasted? 1. You imagine the way you think it would taste based on the ingredients.  2. Ask someone you know…..who has tried it. That’s exactly what I did. My homemade version taste just as I imagined and just like my really good friend said it should.  So let’s get started.

Ingredients :

6 Whole Graham Crackers ( I used Trader Joe’s)
12 Ginger Snaps (I used Trader Joe’s triple Ginger Snaps)
1/2 tsp of Vanilla Extract
3 TBS of oil ( I used Organic Coconut Oil)
1 TBS of Powdered Sugar
4-6 TBS of Water

Instructions :

Place Graham Crackers and Ginger Snaps in the Food Processor and blend on high until you have a crumb consistency.

Add your extract, oil and water ( add your oil and water 1 TBS at a time until you get the desired consistency).

Transfer to a jar and store in the refrigerator.

This recipe makes 1 Cup.
