Peanut Butter Bread

Hello all,

I have been wanting to make this for week’s. It’s such a great feeling to make something new and it turns out right the first time. The little thing’s excite me!!!! So onto the recipe……

Ingredients:

2 Cups of all purpose flour
1 Tablespoon of baking powder
1/2 tsp of sea salt
1 Cup of Almond Milk Unsweetened Plain or Vanilla ( or milk of choice)
1/4 Cup of Sugar
1 Cup of Peanut Butter
3/4 Cup of Squash Puree (or 2 eggs)

Directions:

Pre-heat oven to 350°

Line a loaf pan with parchment paper

In a large bowl sift in your flour.

Next add baking powder, sugar, milk, peanut butter and squash puree.

Mix until smooth by hand or with a hand mixer.

Pour batter into parchment paper lined loaf pan and bake for 45-50 minutes. ( Feel free to add 1/2 Cup of chocolate chips and or 1/4 of nuts right on top of the batter and then place into the oven.

Once done let it completely cool.

Cut and enjoy. Drizzle on some chocolate ganache or spread on some jam. I love this recipe because you can customize it in so many ways.

Homemade Ground Turkey Helper

Hello all,

I had a request to make a homemade version of hamburger helper. This recipe was kid tested an approved. So now it’s time to share it with you.

Ingredients:

2 pounds of ground turkey (or Chicken or Beef)
1 box of whole grain elbow pasta
1 (16 oz.)Bag of frozen corn
2 cloves of garlic finely chopped
1/4 Cup chopped basil
1/4 Cup chopped cilantro
1/2 tsp of garlic powder, onion powder, smoked paprika, black pepper, sea salt, cumin
1 Tbs flaxseeds (optional)
1 Cup of Shredded Cheese
1/4 Cup Cauliflower Puree
1/4 Cup diced onions
1/4 Cup of red, yellow and green peppers
1/4 Cup Organic Ketchup
4 Tbs of tomato paste

Directions:

In a small bowl combine flaxseeds, garlic powder, onion powder, cumin, smoked paprika, black pepper and salt.

Boil 4 cups of water in a pot. once the water is at a boil add the elbow pasta until al dente and drain water. Set aside for now.

On medium heat, in a large sauce pan add the ground turkey. As the meat is browning, break up the meat as it cooks. Once all the pink is gone add your seasonings, corn, garlic, onions, green peppers, basil, cilantro and cauliflower puree. Stir to evenly combine. Now add tomato paste and ketchup. Stir to incorporate. Now add the cheese and stir to incorporate.

Once the cheese is melted and incorporated well. Add your elbow pasta to a large bowl. Add the meat mixture in the bowl and combine everything evenly.

Turkey & Spinach Meatballs

Hello all,

A few weekend’s ago I was in the grocery store, grabbing a pack of ground turkey. When a lovely lady asked me if I cook with ground turkey often. I excitedly replied with a yes. She asked for a few tips because her ground turkey dishes are always dry.
So now I am going to share the recipe I shared with her, with all.
I love this recipe for a few reasons…..it’s lean, juicy and I can sneak all kinds of veggies and healthy ingredients in without any detection. So let’s get started.

Ingredients:

3 lb pack of ground turkey
2 Tbs of flax seeds
2 handfuls of fresh spinach
1/2 cup of cauliflower puree
3 spring onions
1/4 of a yellow onion
1/4 tsp black pepper, oregano, garlic powder, dried parsley, onion powder, Mrs.Dash
Pich of sage
3 Tbs of Braggs Amino Acid or Low Sodium Soy Sauce
Grapeseed oil

Directions:

Pre-Heat oven to 425°

Line a baking tray with parchment paper

Finely chop the spinach, onions

In a large bowl add your ground turkey, spinach, onions, cauliflower puree, amino acid, herbs & spices

Get everything evenly combined

With an ice cream scoop. Scoop out the ground turkey onto your baking tray. Drizzle Grapeseed oil across the top and bake for 45 minutes
Serve with whatever you like.
