Herb & Lemon Buttered Broiled Flounder

Hello all,

In my life making a meal that is delicious and quick is……..one of the best things” EVER”.   I was in a seafood mood, so I decided to play around with the flounder I had in the freezer.  I am all for experimenting and trust me I have many fails and successful experiences.  So I continue to tweak what didn’t work out so well and keep the successful things in rotation.

So let’s get started…………………….

6 pieces of flounder

2 Tbs of butter

1/4 tsp of salt

1 lemon

1/4 tsp of dried or fresh parsley, black pepper, red pepper flakes, onion powder, garlic powder

Set your oven to broil 500°

Line and baking tray with parchment paper

Lay your fish onto the baking tray and sprinkle each piece with salt.

In a measuring cup melt 2 Tbs of butter in the microwave for 30 second

Zest your lemon into the melted butter and then cut the lemon in half and squeeze all the juice of that lemon into the melted butter.

Add all your herbs and spice, stir to get everything evenly mixed

Pour your mixture over each piece of flounder

Let it broil for 5-8 minutes (the time depends on your oven and thickness of fish) my oven takes 8 minutes.

Serve with whatever you like.

Enjoy & Until Next Time,

Oven Fried Zucchini

Hello all,
I am always looking for interesting ways to make healthy things for my family.  So here’s my latest success.
Oven fried zucchini.  Ahhhh so good, this will now be in the weekly rotation. It’s quick, healthy and easy to make.

So let’s get cooking.

Pre-heat oven to 425°

2 Zucchinis

1/4 tsp of the following
Paprika, black pepper, onion powder, garlic powder, sea salt

1 TBS of grape seed oil (or oil of choice)

Line a baking tray with parchment paper

Combine seasoning into a small bowl except the sea salt

Cut zucchini into desired style. No more than 1/4″ thickness

Place zucchini into a bowl, add oil and seasoning. Toss and get everything evenly coated.

Place evenly onto baking tray and let cook for 20-30 minutes.

Remove from the oven immediately salt and let cool.

Tada your all done.

Enjoy and until next time,

Pumpkin Waffles

Yesterday was grocery shopping day.  The stores that I love are Trader Joe’s, Whole Foods and Wegmans.  So at TJ’s I came across a new item. Which the store clerk said, just came in the night before. So I dropped 2 of them into the shopping cart. Hoping they will taste delishhhh.

I tried them this morning and I’m in “LOVE” They have the perfect amount of pumpkin, nutmeg and cinnamon flavor without being over powering…..so glad that I gave them a try and that they taste terrific.  TJ’s always has something new and delicious to try. It’s the one store where the list just goes out the window….lol.

Enjoy & Until Next Time,

Sewloveable 😀
