Easy No Fuss Coconut Rice

Many years ago a friend had me over for dinner. She had a great dinner that included coconut rice. That inspired me to give it a try. The first time I made it, it turned out well……but after that first time….I just couldn’t get the consistency right. So a few days ago I decided to give it another try to compliment a dish I wanted to experiment with. Well it turned out great and I have been able to duplicate the process. The process is super simple that my youngest who is learning to cook, made it all by herself. So now it’s time to share.

Ingredients:

1 1/4 C of Brown Jasmine Rice (or rice of choice)
3/4 C water
1 1/2 C coconut milk
1/2 tsp salt
1 Tbs Cane Sugar

Directions:

In a medium pot add rice, water, coconut milk, salt and sugar. Stir to mix together.

Set the stove on high and bring to a boil. Takes about 5 minutes (make sure your top is on the pot).

Once it begins to boil immediately reduce to a simmer for 25 minutes. Once it’s done serve with whatever you like.

Pina Colada Smoothie

Hello all,

Yesterday I was craving a Pina Colada. So I thought why not try out a smoothie version. The thought of that took me down memory lane. I remember as a kid my parents having the best dinner parties. They would have jazz music playing,  great food and cocktails. My favorite part was when my dad would make me my very own Virgin Pina Colada with a little umbrella. Ahhhh those carefree fun day’s of childhood.  Now onto the recipe.

1 Banana
1/4 Cup of unsweetened shredded coconut
1/2 Cup of frozen pineapples
1/4 Cup of frozen mango
1/2 Cup of Coconut Milk
1 tsp of simple syrup (optional)

Blend it all together and enjoy.

Mango, Banana & Coconut Milk Smoothie

Ok so recently I have been watching a youtube channel called Dear Napturals85……and she was experimenting with the 80/10/10 (raw foods only) lifestyle of eating. Now I am not fully trying the 80/10/10…. (I don’t have the willpower. …lol. I was just inspired by some of the things I saw on her channel…….which inspired the banana, mango and coconut milk smoothie. All I can say is I LOVEEEE this smoothie, so much so that I forgot to photograph after making it.  So in the photo below it’s nearly gone….lol.

This was so good half of it was gone before I remembered to take a pic…lol.

To make this smoothie here’s what you need to do.

Ingredients

1/2 cup frozen mango
1 banana
1 tsp ground flaxseed
1/4 cup of light coconut milk
If you need to more sweetness simply a 1 tsp of agave
Blend and enjoy!!!!
