Organic Chocolate Peanut Butter & Banana Bread (Vegan)

Hello everyone and welcome,

Since today is National Banana Bread Day…..I thought I would do some baking. I must tell you this bread is soooooo good. I could barely restrain myself from eating it all….lol. One good thing about this bread is that it does have some nutritional benefits….which made me feel better about having 2 slices!

Now onto the recipe…….

Ingredients:

2 C organic Spelt Flour or AP

2 ripe organic bananas

3 Tbsp organic cacao powder

1/2 C organic unsweetened applesauce

1  1/4 C organic cane sugar

1/2 C grapeseed oil ( or oil of choice)

2 Tbsp organic peanut butter

1  1/2 tsp baking powder

1 tsp baking soda

1 tsp organic vanilla extract

1/4 tsp pink Himalayan salt


Method:

  1. Preheat oven to 375°F and lightly grease a loaf pan.
  2. Mix together the (dry ingredients) flour, baking powder, baking soda, salt, cacao powder.
  3. In a separate bowl or food processor mix together (wet ingredients) bananas, applesauce, sugar, peanut butter and vanilla extract.
  4. Add the dry ingredients to the wet and mix until combined.
  5. Pour mixture into loaf pan and bake for 1hr-1hr 15 minutes. Let it rest for about 10-15 minutes before removing from the pan. Allow it to completely cool on a wire cooling rack.

DIY Starbucks Inspired Mocha Frappucino

Hello everyone,

Welcome To Tasty Tuesday!

Recently I packed the family up to go and visit my brother and his family for a few day’s. We had such a great time. Family time is absolutely the best. The constant laughter is simply unforgettable.

While we were away. I decided to do some running around with all the kid’s my 2 + my 2 nieces. So our last stop that day was Starbucks….my nieces love Frappucino’s. It’s amazing how my daughter’s are unwilling to try some things I suggest……but when their cousin suggest it, it’s a must try…..lol.

Well, that’s exactly what happened at Starbucks. As a result, FRAPPUCINO is all they have been asking for since. Which prompted me to try a DIY VERSION. My 1st attempt was a fail, but my 2nd attempt was a success….so now I want to share.

Let’s make a yummy Mocha Frappucino.

Ingredients:

8 oz of almond milk (original, vanilla or even chocolate unsweetened)
8 oz cup of brewed coffee or espresso (chilled)
1/4 Cup of simple syrup(chilled)
2 Tbs of unsweetened cocoa powder
A few ice cubes

Directions:

Brew a cup of coffee place in the freezer or fridge to completely cool, quickly that is.

Once your coffee has cooled add it to the blender, along with milk, cocoa powder and sugar….. Blend

Add your ice and blend quickly for a few seconds

All done and ready to serve, add whip cream and shaved chocolate or whatever ever you like.

Serves: 2
Double the recipe to serve more.

Homemade Nestle’ Crunch Inspired Candy Bar Only 2 Ingredients

Welcome to Tasty Tuesday!!!

My youngest is a serious chocolate, lover. It has been this way since a friend of mine gave her a slice of homemade chocolate cake at the tender age of 2. Since then, there has been no turning back. Now, she is reading the ingredients and verifying the chocolate quality by the percentage of cacao. I think to myself……who’s child is this….lol.

In all honest I love her thirst for knowledge, discovery and detailed oriented way of being, when it come to things of interest to her……who know’s it may lead her to a life and career she loves, when she’s older.

Since it’s been sooooo hot out. I have been trying not use the oven very much. So off to the kitchen she and I went to make chocolate bar’s.

All I have to say is……why haven’t I been doing this all along. To make up for lost time, I am sure I will post all types of chocolate bar recipes on this blog……you’ve been forewarned…lol.

Let’s dive into this recipe……

Ingredients:

12 oz. ( 1 1/2 Cups) Melted chocolate of choice
1 Cup of Crisp Rice Cereal of choice

Method:

1. In a double boiler melt your chocolate. We used 4 oz. bittersweet and 8 oz. of semi- sweet. We made this recipe again using 6 oz. semi-sweet and 6 oz. of milk chocolate and then again for a friend using 4 oz. bittersweet and 8 oz. milk chocolate. So you can really use what every chocolate and ratio you desire. Since you’re making them yourself……they should be everything you want them to be.

2. Once your chocolate has cooled for a minute or 2 add your rice cereal. Stir to coat each piece of cereal with the melted chocolate.

3. In a small parchment-lined baking tray (making sure the parchment overhangs for easy removal later. Pour your mixture in and spread out evenly. Place in the refrigerator for 30 minute or the freezer for 15 to allow the chocolate to set.

4. Remove for the refrigerator or freezer and cut into the desired size.

Homemade Chocolate Tart with a Chocolate Graham Cracker Crust

You’re going to Love this recipe. This recipe is really special to me, it’s my grandmother’s. She was such a wonderful cook and baker. I am delighted and honored to have all her recipe’s passed down to me.  A few day’s ago I finally decided to start trying some of them out. When I saw her recipe for a Chocolate Pie…. I knew I had to make this recipe first. So, I took her recipe and put the Sewloveable spin on it and decided to make a Chocolate Tart with a Chocolate Graham Cracker Crust. Can I just say, this is the most decadent dessert I’ve made to date and mmm mmm good…lol.

Ingredients:

Crust
1 pack of Graham Crackers
4 Tbs Organic Vegetable Shortening
2/3 C Cocoa Powder
2 Tbs Powdered Sugar
1/2 tsp Organic Vanilla Extract

Filling
2 Organic Egg Yolks
3/4 C Organic Cane Sugar
2 Tbsp All Purpose Flour
1/4 C Cocoa Powder
1/4 tsp Sea Salt
2 Tbs Organic Vegetable Shortening
1 C Chocolate Almond Milk
1 tsp Organic Vanilla Extract

Directions:

Crust

Preheat oven to 325°

Grease a 9″ Tart pan with vegetable shortening and set aside.

Break your package of Graham Crackers into smaller pieces and place into food processor. Pulse on high until you have fine crumbs about 1 minute. Add cocoa powder, powdered sugar, vegetable shortening and vanilla extract and pulse on high speed for 30 seconds or until evenly combined.

Spread your Graham Cracker mixture into tart pan. Place tart pan on a baking sheet (The baking sheet is for easy removal of the tart pan from the oven). Place into the oven for 7-8 minutes. Once done set aside and let cool while you work on your filling.

Filling

In your food processor add your sugar, flour, salt, cocoa powder. Pulse for 30 seconds to evenly combine. Next add egg yolks, shortening, almond milk and vanilla extract pulse on medium speed for 1 minute.

Pour the mixture on top of your cooled crust and bake at 325° for 15-20 minutes. Or until your filling is set and looks glossy. If you see any bubbles or cracks on the surface, remove immediately that means is starting to become over baked.

Allow to cool before cutting.

Chocolate and Peanut Butter Chip Blondie’s

Here’s a quick and easy recipe.

Blondie’s are one of my fav’s. It’s everything I love all in one.

Onto the recipe……..

Ingredients:

4 Tbs unsalted butter ( melted)
1/2 cup (unsweetened) apple sauce
1/3 cup (packed) brown sugar
1 Tablespoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup bittersweet chocolate chips
1/2 cup peanut butter chips

Instructions:

1. Preheat the oven to 350°F Grease a 8-inchx8-inch baking pan.

2. In the bowl or a stand mixer, add apple sauce, vanilla, brown sugar and melted butter. Mix to incorporate . Add the flour and salt, and mix with a spatula until just combined. Add the chocolate chips and peanut butter chips fold into batter to evenly distribute.

3. Scrape the batter into the prepared pan. Bake for 30 to 35 minutes, or until a knife or tooth pick inserted into the center comes out clean. Cool for at least ten minutes, then cut into squares and serve.

Easy Smore’s Brownie’s

Hello Everyone,

Sweet & gooey chocolate goodness. I’ve had this recipe on my mind for a couple of week’s. Well, today I decided to get in the kitchen and give it a try. Let’s get started.

Ingredients:

Graham Cracker Crust:

1 pack of Graham Crackers
4 T. Room-temperature butter

Brownie:

3/4 C. Organic Cane Sugar
3/4 C. Cocoa Powder
1 egg
1/4 C . Unsweetened Organic Applesauce
5 T. Butter (melted)
1/4 t. Salt
1/2 C. Flour
3 C. Mini Marshmallows

Instructions:

Preheat oven to 325°

In a food processor pulse graham crackers for 1-2 minutes.

Add room temp butter and pulse for 1 minute.

Pour the graham crackers into your lightly greased brownie pan, spread them out and firmly press into the pan. Set aside for now.

Next let’s work on our Brownie Batter.

In a large bowl add sugar, flour, cocoa powder and salt. Stir to combine.

Next add egg, applesauce and melted butter. Stir to combine. You will have a nice thick consistency.

Spread the brownie mixture over the graham cracker crust.

Bake for 25-28 minutes. Poke in the center with a toothpick and it should come out clean.

Pour the 3 C. of marshmallow on top of the brownies.

Put your oven on broil. Place you your brownie back into the oven for 1 minute. After 1 minute move the brownies to the bottom rack for 1 minute. Then remove and let cool completely. Cut into squares by dipping your knife in hot water, which results into a nice smooth cut.

Mounds Inspired Chocolate Chip & Coconut Cookie

Hello everyone,

Can I just say coconut and chocolate in a cookie……is everything I Love in a cookie. So I decided to give them a try. So let’s get baking.

Ingredients:

1 Cup All Purpose Flour
1/2 Cup of Unbleached Wheat Flour (you can certainly used 1 1/2 Cup of all purpose flour instead)
1/2 Cup of Organic Brown Sugar ( DIY recipe here)
1/2 Cup of Organic Cane Sugar
1 Tbsp Organic Vanilla Extract
1/4 Cup Organic Squash Puree
1/2 Cup Chocolate Chips
1/2 Shredded Coconuts (unsweetened)
3 Tbs Organic Vegetable Shortening (melted)
1 Tbs Almond Milk

Directions:

I used a hand mixer to make the cookie dough.

Line a baking sheet with parchment paper and set aside.

Preheat oven to 325°

In a medium bowl sift flour, baking soda and salt and set aside.

In a large bowl cream sugar’s, melted shortening.

Now add vanilla and squash and mix.

Add half of sifted flour mix. Add the other half of flour and milk and mix.

With a spatula fold in chocolate chip’s and shredded coconut.

Using a 1″ scoop, place dough onto the baking sheet and bake for 16-17 minutes.

Once done remove and let cool for 3 minutes and transfer to a cooling rack to completely cool.

Yields 22 cookies

The cookies will have a nice crisp outside and soft and chewy inside.

The cookies were so yummy….that my so called coconut hater loved them.

Chocolate Chip Tortilla Grilled Cheese

Hello all,

Over the weekend my youngest couldn’t decide what she wanted for lunch. So I had an idea, to make a similar sandwich to something Giada De Laurentiis from the Food Network made. Giada made a Panini with chocolate and brie cheese. My daughter suggested tortilla instead of bread. We used Muenster instead of Brie because it’s her favorite and semi-sweet chocolate chips like the original recipe. She loved it, my guess is because all her favorite thing’s taste great together. Nothing like a little salty and sweet all in one. So here’s to trying new things and it actually turning out successfully!!!!!

Ingredients:
Flour Tortilla
Semi-Sweet Chocolate Chips
Muenster Cheese
1/2 tsp of unsalted butter

Directions:
In a pan on medium heat add your butter. Lay your tortilla in the pan, next lay your cheese and handful of chocolate chips, lay your other tortilla on top.

Cook until golden brown and then flip to get the other side golden.

Cut, let cool a little and enjoy.

Neapolitan Cookies & Ice Cream Super Quick & Easy Sweet Treat

This is a great dessert option when you just don’t have time to bake or simply are just not in the baking mood.  This sweet treat is perfect for the kids to make themselves.  All you need are store bought cookies of your choice.  Soft or cookies with a crunch will work perfectly.  For this treat I went with Whole Foods Fresh Baked Cookies.  They now sell a variety pack of 20 which contains 5 of each of the following sugar, oatmeal, chocolate with chocolate chips and chocolate chip for $9.99.  That is a great deal for Whole Foods.

To assemble I cut a sugar cookie and chocolate with chocolate chips in half and put a tablespoon of strawberry ice cream in between( you could of course opt for Frozen Yogurt as well) and came up with this delicious treat………………

For a busy mom this is perfect.  It’s quick and the kids love it.  That is what I call a win-win.
