Easy Cheesy Scalloped Potatoes

To be honest I really didn’t know what to title this post……because my dish is a cross between scalloped and au gratin potatoes. So I just decided on Easy Cheesy Scalloped Potatoes since my dish does not have the breadcrumb topping as typically used when making au gratin. With my title chosen, it’s time to give a little back story. I was out dining with friends and I ordered the au gratin potatoes and they were soooooo good. So a few weeks later I decided to give the dish a try myself.  Of course, I had to put my own little spin on it!

Now let’s dive into the recipe………..

Ingredients:

6 organic Yukon gold potatoes

1  3/4 C cheese of choice ( I used 1 C organic mozzarella and 3/4 C Kerrygold reserved cheddar)

1  2/3 C organic milk ( plain almond milk will work in this recipe)

2 Tbsp butter ( my preference unsalted Kerrygold butter)

2 Tbsp organic all-purpose flour

Seasonings:

1/2 tsp organic garlic powder, organic onion powder, pink Himalayan sea salt & black pepper (mix together in a bowl and set aside.)

1/4 tsp organic parsley, pink Himalayan sea salt, organic garlic, organic onion powder & black pepper (mix together in a bowl and set aside.)

Method:

  1. Finely slice your potatoes about 1/8″ thick. Place in a bowl add the 1/2 tsp bowl seasonings and toss to evenly coat your potatoes with the seasonings.
  2. In a saucepan over medium heat add your butter and allow it to melt. Then add your flour and stir, stir, stir, add the milk and stir some more.  Add a tablespoon of cheese to the mixture and stir to make everything nice and smooth. Next add the 1/4 tsp bowl of seasonings. Stir to evenly incorporate.
  3. In a 8″ X 8″ baking dish. Spoon in some of your sauce onto the bottom of the baking dish. Next lay out your potatoes on top and then add a bit of cheese on top of the potatoes. Next more potatoes followed by sauce, then more potatoes followed by cheese. Keep alternating like this making sure you save enough cheese for your final top layer.
  4. Bake in a 425 degree preheated oven for 30-45 (or until nice and golden brown on the edges.)

    How are you?

    Anything that has milk, butter and cheese in it is absolutely right up my alley because it will be most delicious. Ah! It looks so moist and scrumptious, I want it, I need it, I am so hungry. XD

    This is something that I could definitely try out, it’s an interesting way of cooking potatoes. The layers remind me of lasagna.
