I’m a foodie…….I must admit. So I decided to give something new a try. Ahhhhhhh this recipe is what I call a win/win. You get the great benefit of the fiber from the chickpeas and the flavor of a chip. Pure delicious excitement!!!!
Let’s dive right on in to this recipe.
Ingredients:
1 carton or can of chickpeas, rinsed, drained, and dried
1 tablespoons grape seed oil (or oil of choice)
1/2 teaspoon paprika
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon vinegar
1/2 teaspoon salt
1 teaspoon cane sugar (or sugar of choice)
Directions:
Preheat the oven to 425°.
Line a baking sheets with parchment paper.
In a small bowl, mix seasonings, vinegar and oil.
In a medium bowl add the dry chickpeas and then your seasoning mixture. Mix it around gently so the pea keeps it’s shape. But making sure to evenly cover and coat the chick peas with the seasoning mixture.
Bake for 30-35 minutes or until golden and crunchy.
Let cool and enjoy!
* You will probably want to double or triple the recipe. I made a small batch…….because I wasn’t sure if my picky children would like them. They LOVED them and finished the bowl in less than 30 minutes…lol.
