Quick & Easy Homemade Pancake Mix

Hello everyone,

Who needs store bought, when you can do it better in the same amount of time?   Here’s a quick and easy pancake recipe.  Let’s get started……..

Ingredients:

Dry mix:
Mix all ingredients to evenly incorporate. Store in an air tight container and use when ready to make pancakes.

4 Cup flour
2 TBS baking powder
3 tsp baking soda
1/2 tsp salt

Making pancakes:

1 Cup pancake mix
1 TBS vinegar
1 cup almond milk ( or milk of choice)
1 egg
1 TBS butter, melted or oil
1 tsp vanilla extract
1-2 tsp cinnamon

Directions:

1. Combine milk with vinegar in a measuring cup. Set aside for about 5 minutes.

2. Add 1 Cup of your pancake mix,
butter, egg, milk mixture, cinnamon, vanilla into the bowl. Mix until nice and smooth.

3.Spray skillet with non stick cooking spray or use oil or butter. Heat skillet on med-high heat. Pour pancake batter into skillet in 1/4 cup increments or use a ice cream scoop.

4. Cook pancakes until bubbles begin to appear on the surface. Flip with a spatula and cook for another 1-2 minutes until golden on the bottom.

This mix is very versatile. You can add fruit, chocolate chips or whatever you desire as you drop the 1/4 cupfuls into the skillet. Get as creative as you would like. Enjoy!
