Easy Homemade Strawberry & Chocolate Cereal Bars

Hello everyone,

My daughter has been begging me to try and make…….her favorite snack….. Strawberry Cereal Bars. She loves the Trader Joe’s Brand. So of course I had to honor her sweet request. Since my youngest doesn’t like strawberries, I decided to add her favorite filing chocolate. Now let’s dive in and start baking.

Crust:

1/2 cup organic unrefined coconut oil
1/3 cup organic cane sugar
1/2 teaspoon organic vanilla extract
1large organic egg
2 cups organic whole wheat flour
1 cup organic oats (steel cut, old fashion or instant)
1/2 teaspoon Pink Himalayan sea salt
1 teaspoon organic baking powder
Organic Almond Milk ( or milk of choice)

Filing:

Any preserve, jelly, jam (I used a homemade strawberry jam click here for that recipe.) or melt a 1/2 cup of chocolate chips I opted for semi-sweet.

Directions:

Pre-heat oven to 350°

Cream the coconut oil, sugar, vanilla, and egg, with an electric mixer or food processor.

In a separate bowl, combine flour, oats, salt, and baking powder.   Add dry ingredients to your creamed ingredients, a little at a time, until it is well incorporated. (Add a tablespoon of Almond Milk at a time if needed to help the dough form.)

Wrap dough in plastic wrap or place in a bowl and chill for 1 hour in the refrigerator or 15 minutes in the freezer. Once chilled, roll out onto wax paper. Roll and cut out a 4×4-inch square that is 1/4 inch thick.

Spoon 1 teaspoon of the filling onto one side, and fold over and pinch to keep the filling in.  Transfer to a cookie sheet and bake at 350 for 15 minutes.  To keep these soft, store in a zip lock plastic bag or air proof container.
