Zucchini Chips

Hello all

Recently, I made oven fried zucchini and that was terrific.  I wanted to make it again but try something a little different.
So here’s what I came up with.

Ingredients

2  Zucchinis
1/2 tsp of onion powder, garlic powder, black pepper
1/4 tsp of paprika & cayenne (cayenne optional)
1/2 Cup of flour
3 tbs of Grapeseed Oil (or oil of choice)
Salt to taste

Directions:
Pre-heat oven to 400°
Line a baking sheet with parchment paper
Mix all seasoning in a small bowl (except the salt)
Cut your zucchini into 1/4 slices
Place in a large bowl, now add 1 Tbs of oil
Shake on your seasoning (leaving a tsp for later)
Evenly coat  your zucchini in the oil and seasoning
Add the remaining seasoning to your flour
Add 1 tbs of oil
Add your flour and even coat zucchini
Lay your zucchini out onto your sheet tray
Drizzle with the Tbs of oil and bake for 20 minutes
Salt immediately, let cool and enjoy.

This is really a super simple dish and a great way to get veggie skeptics to enjoy them.
